I love all the flavors in this Slow Cooker Green Chile Shredded Beef Cabbage Bowl with Avocado Salsa. When I look back in the monthly archives on Kalyn's Kitchen, it's interesting to see that the things I'm cooking at certain times of the year have a definite pattern.  For example, I obviously like to hold on to summer as long as I can, so every September I have Zucchini Recipes and Tomato Salads posted long after many bloggers have moved on to soups and pumpkin.  I'm sure there will still be more zucchini and tomato recipes coming this year, but I hope I can get a little credit for this Slow Cooker Green Chile Shredded Beef Cabbage Bowl with Avocado Salsa as a wonderfully season-spanning dish as we move from summer to fall.  The recipe has a layer of crunchy spicy slaw and some avocado salsa for summer, topped by spicy green chile beef that cooks in the slow cooker for fall.  I really loved this dish which I thought was just spicy enough to be interesting.  The shredd...

Slow Cooker White Bean Mushroom and Rosemary Spaghetti Squash Bowl

Love this delicious white bean and mushroom ragout, served in a bowl over spaghetti squash! A few months ago a reader named Amy sent me this recipe for Rosemary, Mushroom, and Chickpea Ragout served over toast, and I printed the recipe and added it to my big folder of "must cook" ideas.  (Thanks Amy!)  Then a few weeks later I was flipping through my friend Stephanie's newest book 365 Slow Cooker Suppers and I noticed a slow cooker recipe with similar flavors.  So you know where this is going don't you?  I combined ideas from both those recipes, plus a few thoughts of my own, and came up with this Slow Cooker White Bean, Mushroom, and Rosemary Spaghetti Squash Bowl .  Jake and I loved this, and he also thought it was delicious served over rice if you'd prefer that to the spaghetti squash version.  Whether you eat it on toast, over rice, or in a bowl with spaghetti squash, this mushroom and bean ragout is a satisfying blend of flavors. Recipe for Julienned Zucchini Vegan Bowl with Peanut Sriracha Sauce

Julienned Zucchini Vegan Bowl with Peanut-Sriracha Sauce is a perfect Meatless Monday dinner. Even though I recently posted my collection of 50 Amazing Zucchini Recipes , a wonderful friend keeps bringing me zucchini, so I keep experimenting with it.  Ever since I got a Julienne Cutter a couple of summers ago, I've been having fun with easy-to-make zucchini "noodles" and this was another recipe where I used thin little strips of zucchini as a stand-in for pasta, topped with peanut-Sriracha sauce this time.  I added some diagonally sliced sugar snap peas, thin strips of red bell pepper, cilantro, and a few chopped peanuts, but you could add most any type of raw vegetable that would taste good with a spicy peanut sauce.
