Thanks to Evita at Evolving Wellness for asking this question: How about beans? I cannot imagine getting them out of my diet. Do you ever eat them and if so how? I cant imagine raw? A legume is a plant in the family Leguminosae , or a fruit from these plants. But to most folks, legumes are more commonly known as beans. Take a look at a list of common legumes. I bet more than one of these will surprise you: alfalfa black beans carob clover cowpeas (black-eyed peas) garbanzo beans (chickpeas) lentils mung beans peas peanuts soybeans Anyone else surprised to see alfalfa on the list? Easy Calabacitas or Cheesy Summer Squash with Onions and Chiles Low Carb Gluten Free

If you have a surplus of zucchini, use some of them to make this delicious and easy Calabacitas. (Updated with better photos and step-by-step instructions, August 2014.)   Calabacitas is a traditional recipe from the American southwest, and it's a quick and easy way to use up abundant summer squash if you have them in your garden.  Traditional recipes for Calabacitas sometimes include things like corn or tomatoes, but in my version I concentrate on the flavors of the squash, onions, cheese, and green chiles.  This is definitely a recipe that should be made to individual taste, and when I first made this I thought a 4 oz. can of diced green chiles was plenty spicy, but now I'd probably use a bigger can.  Key to the flavor here is slightly browning the onions and squash as they cook; as long as you manage that you can't go wrong with this easy recipe. If you did the cooking, like I did, you are probably looking at a bunch of leftover stuffing, mashed potatoes and other food - except pie. I bet thats all gone! Heres a very quick and easy dish to make from your left over Creamy Vegan Mashed Potatoes . Classic Shepherds pie has ground beef or lamb. Vegetarian Shepherds pie recipes usually replace the meat with mushrooms, lentils or other beans. I made a quick bean chili for the base and the spicy flavor goes well with the creamy mashed potatoes. I like making this dish in 4 small, individual casserole dishes. Low in Calories and High in Fiber After eating way too much on Thanksgiving, Im definitely watching every calorie that goes into my mouth today.
