Pan Seared and Roasted Mahi Mahi with Mediterranean Salsa and Feta

Image
Pan-seared and Roasted Mahi Mahi with Mediterranean Salsa and Feta is an easy week-night dinner. I'm trying to eat fish as often as I can, so when a reader named John sent me the recipe link for Virginia Anthony's Mediterranean Mahi Mahi from Taste of Home, first I thought "YUM" and then I thought about how I could adapt the recipe to make it suitable for our month of Daily Phase One Recipes .  John told me how much he had enjoyed this dish, and when Jake and I adapted the recipe a little and tested it, we both loved it too; in fact we both cleaned our plates even though it was on a day when we'd already sampled several recipes!  This is a quick week-night dinner and f you can't find Mahi Mahi you could make this with another firm-textured fish like halibut, tuna, shark, swordfish, or cod.  (There's only one more day of Daily Phase One Recipes!  You can see all the recipes from the month by clicking Daily Phase One Recipes .  Check after the recipe for Pha...

Warm Whole Grain Couscous Salad with Garbanzo Beans Feta and Cherry Tomatoes

A Great Source of Fiber and Vegetarian Protein Couscous is a tiny pasta thats common in Algerian and Moroccan cuisine. It reminds me of pastina, the Italian equivalent that I grew up with. I love the "lightness" of couscous and have been on the outlook for a "whole grain" version of this pasta for years. I was thrilled to find whole grain couscous at Trader Joes this weekend. I quickly scooped it up and couldnt wait to try it. Whole grain pasta always contains more fiber and other nutrients than its highly processed counterpart. To get at least 25 grams of fiber per day needed for optimum health, you really shouldnt waste many meals with processed and refined foods. This whole grain couscous recipe packs over 11 grams of fiber per serving (almost half of your daily requirement) with most of it coming from the whole grain couscous and garbanzo beans. It also provides 15 grams of high quality protein per serving. Garbanzo beans contain all 9 essential amino acids. War...

Eat Lots of Colors You only have to look at your dinner plate to see the how nutrition your meal is. Phytochemicals, or beneficial plant chemicals, come in all different colors. This colorful salad is bursting with color and nutrition. You should opt for eating as many colors as you can each day and no, multi-colored MMs dont count. Hemp Seeds Im a big fan of hemp seeds and hemp seed products. They are high in omega 3 fatty acid and they are also a great source of high quality protein. Add them to your salads, over your morning bowl of fruit or hot cereal or anywhere you would use healthy seeds. I like the Nutiva brand. They are non-GMO certified and offer raw, organic product. To learn more about hemp read, " Hemp Horizons: The Comeback of the Worlds Most Promising Plant ". Rich in Essential Fatty Acids The salad gets its high content of omega 3 from both the hemp seeds and the flaxseed oil. Each serving provides over 2 grams each of omega 3 and omega 6 essential fatty acid...
