My healthier versions of some Irish-American favorites to celebrate St. Patrick's Day! (Updated March 2014 with more options and better photos.)  Even if you don't have even the tiniest bit of Irish blood, you're still probably aware that next week is St. Patrick's Day.  I don't remember my mom ever cooking special food for this day, and since I've been a food blogger I've learned that many foods Americans cook for this holiday are not really Irish at all.  I am a little bit Irish, but even so I'm not claiming that my favorites in this post are authentic Irish recipes.  Still they're a fun way to celebrate the day, and most of these are lightened up a bit from the Irish-Americans foods that are often eaten on this day.  Enjoy! Today, July 3rd, is national eat bean day, so why not celebrate it by adding some beans to your diet. Beans (a legume) are a great source of protein, fiber, minerals and some B vitamins. They are low in fat and cholesterol. National Eating Out Day Going to a restaurant on Valentines Day is like going to church on Easter Sunday. Now Im not saying you should stop going to church on Easter Sunday, but I do suggest you stay home this Friday.  There may be a few small, local restaurants in your town who will do a good job just because thats just what they do, but most big restaurants will not. Heres what you can expect: The restaurant will be mobbed and youll be sitting elbow to elbow with a room full of strangers. And when you finally figure out how to focus real hard and filter out all the noise and distractions (so you can concentrate on your special someone), you will not-so-politely be given your check so that they can usher in the next seating.
