Day 246. This recipe is taken directly from The Pioneer Woman . We had the best weekend, ever, and spent the night with our good friends at their new house. My friend, Nancy, says, "bring your crockpot and make something really good. Im going to invite my sisters, and their boyfriends, too." Nothing like a little pressure.... I know Ive said it before, but the crockpot rocks. It totally and completely rocks. I love bringing food to peoples houses, but it always becomes a bit awkward when you need to prepare and cook the food while you are there. Will the oven be available? How about a stove burner? Day 227. This pudding is bananas! B-A-N-A-N-A-S! sorry. I totally couldnt help myself. We needed a quick dessert for some company and I needed to use the crockpot . And thats pretty much how this dessert was invented. I opened the cabinet, saw some sweetened condensed milk, and we all know HOW GOOD THAT IS when cooked in the crockpot ( except for you shouldnt do it for safety and legal reasons or something like that ) and we had a bunch of bananas. So I mixed the two. The end. The Ingredients. --2 cans of sweetened condensed milk --4 bananas The Directions. I used a 1.5 quart mini crockpot for this dessert. Put the peeled bananas into a zippered freezer bag and let your kids squish the bananas until they get bored or the bag springs a hole and banana goobers fall to the floor. Day 344. Jessica emailed me a few weeks ago and asked if I had a crockpot dolmas recipe. I didnt, but I do now! These are super easy, fun to make, and even more fun to eat. I was floored at how many my kids ate---they really liked them a lot. The Ingredients. 1 jar grape leaves (8oz of leaves, in juice, near the pickles) 1/2 pound ground lamb 1/2 pound ground turkey breast 1 cup cooked white rice 1/2 cup chopped parsley 2 lemons 1 egg 1 tsp allspice 1 tsp dill The Directions . I used a 6 quart crockpot , anything 4 quarts and up would work just fine. I got this recipe after putting a few together from this website according to the flavors I thought my family would enjoy, and from how I remember dolmas to taste. Day 273. Rosh Hashanah starts at sundown tonight. Last week, Brenda emailed me ask if Ive ever made a honey cake in the crockpot. I hadnt. After I called my friend, Jennifer (yes, I realize all my friends are named Jennifer), I learned that honey cake is usually pretty dry and dense. She said "I dont like it, I wont eat it. But my dad does." I really like Jennifers dad, and was on a mission to make a moist honey cake---the crockpot delivers moist cakes. Unless you burn it. I messed this up completely. The cake was rising properly, smelled delicious, and was brown and pulling away from the sides of the crock. The top was still pretty jiggly, so I felt comfortable leaving it for 45 minutes on high while we went to swim lessons. I came home to a horrible burnt-cake smell. The top and middle was okay, but I threw the rest away. That said! If I had taken the lid off, and watched it for about 30 minutes, I think this would have been wonderful. Good morning! I made a wonderful meatball soup a few nights ago. I was inspired by Elise Bauers Albondigas Soup recipe posted on Simply Recipes . I bookmarked this soup about a year ago, but hadnt gotten around to trying it. When I found that Costco started carrying some gluten-free meatballs I knew I was ready to test it out. Elise makes her own, which you can too, but youll need to fully cook them before throwing into the crock. They will disintegrate otherwise. I really liked this soup, and what I liked EVEN more about it was that I made do with pantry and freezer stuff instead of going to the store, which makes it "free"! Day 191. Hello! Have I mentioned yet that Im on TV today ?! Hold me. When I filmed the segment, Rachael gave me two curry recipes. She had heard through the producers about my sad attempt at making a coconut curry recipe , so gave me two recipes that her kitchen staff perfected for the Crock-Pot--one Thai, and one Indian. I finally (it was so hard to wait!) made the Thai version yesterday. Im going to make the Indian version today, and will post that recipe tomorrow. Day 176. Whats the best thing to do with old, broken crayons? Recycle them! This is a great rainy (or overly hot) day project, that is both fun and useful. The Ingredients. --old crayons --muffin tin or candy mold. I was ecstatic to find a 6-hole, throw-away muffin tin at the grocery store. I really want to try and make cupcakes. In order for it to fit in my 6qt oval Smart-Pot, I needed to trim the edge a little with some scissors, but afterward I did that, it fit nicely into the crockpot . My friends have candy molds that fit in their crock perfectly, and next time Im at the craft store Im going to look for them. --kid helpers. The Directions. Day 262. I found this lentil soup recipe earlier in the year, and bookmarked it to try. Yesterday I woke to a foggy sky, wet grass, and I contemplated turning on the heater. Day 184. I took the kids to a little zoo and amusement park last week with my friend Jennifer, and her baby, Max. Jennifer went on and on and on and then on some more about cream of asparagus soup. She had some as a starter in a restaurant and was really impressed, and asked if I could try to make it in the crockpot. So I did. There are two versions---one with cream and one without. The without cream is just as creamy, but doesnt leave a velvety film on your tongue the way the other one does. And the color is more forest-green than asparagusish. This recipe came from my new friend, Astrid, who grows a lot of chard in her garden, and needed a way to use it up. So we crockpotted the chard. The Ingredients. --2 big bunches of swiss chard, chopped (I only chopped the green part and gave the stems to the guinea pigs) --1 cup baby carrots, chopped --1 onion, chopped --7 baby red potatoes, or equivalent, chopped --5 cloves of garlic, chopped --1/4 cup fresh basil (hey! guess what? chop this, too!) --5 cups broth (I used chicken, but if you want this to be vegetarian you should use veggie broth) --1/2 t black pepper --1 t kosher salt (you might want to add more salt and pepper after cooking, to taste) --garnish with Parmesan/Romano cheese, optional The Directions. Day 178. mmmm . Philly Cheesesteaks . I made them earlier in the year, and they were delicious. But perhaps maybe you dont have bread in the house, or you dont want a bunch of carbs , or you dont want to chew a lot... guess what? I have a solution! Make Cheesesteak soup! In the crockpot ! Day 251. I tried to make fruit leather in the crockpot . It didnt work. I think it could have worked----everything was right in theory----but I cooked it way too long because I fell asleep and it was my sleep-in day so I didnt get up right away to check on it. The house now smells like a charred apple pie. The Ingredients. blurry picture. I didnt change the lens. --4 apples, cut in quarters --2 tsp vanilla --1/2 cup dried cranberries --juice from one lemon The Directions. I used apples as a base, but you can use any fruit youd like. Except this doesnt really work, so youd mostly just be wasting fruit. I didnt peel the apples, but quartered them (removing the seeds and core) and threw them into a 4-quart crockpot . Add the juice from one lemon, 2tsp of vanilla, and a 1/2 cup of dried unsweetened cranberries. Cover and cook on low for 6-8 hours. The apples will be quite squishy, and it will be like applesauce. Day 228. In the past few weeks Ive gotten a few different emails from fantastic people sharing their hash brown layered casserole breakfast concoctions. This is a combo of Melba, Mikell , and Alisons recipes. We were ecstatic with the results. This is a keeper, and something you should definitely file away for a brunch or potluck get-together. The Ingredients. 30 ounce package of plain frozen hash brown (shredded) potatoes 4 already-been cooked sausage, or leftover diced ham (I used chicken and apple sausage) 1/2 yellow onion, diced 1 green bell pepper, seeded and diced 1 1/2 cups shredded cheese 12 eggs 1 cup skim or fat free milk 1 teaspoon kosher salt 1 teaspoon black pepper The Directions. Day 149. I was looking through All Recipes the other day and stumbled on African Peanut Soup . The ingredients were simple, and we happened to have everything on hand. I was excited to give it a go, as there were 111 positive reviews. The result was delicious--a thick, hearty soup with a bit of spice and a beautiful peanut flavor. The Ingredients. --1 yellow onion, diced --2 green onions, chopped --2 red bell peppers, chopped --4 cloves minced garlic --1 28 oz can of crushed tomatoes, with liquid --8 cups vegetable broth --1/4 t black pepper --1/4 - 1/2 t chili powder --1/2 cup uncooked brown rice --1 cup peanut butter (to add later) --dollop of sour cream and a bit of tabasco sauce (optional) The Directions. --wash and chop all of the vegetables, and put into the crock. Day 192. Curry, day 2! This is the Indian version of the curry recipe that Rachael gave me on the show. The flavors are again spot-on. This is just as good, if not better, than the take-out coconut curry we order. Lots. But maybe not anymore, since now we can make it Whenever We Want. The Thai Curry Recipe is here. The Ingredients. Day 188. Ive never made a cheesecake before; I always thought it sounded complicated. Im a pretty picky cheesecake eater, I hate it to be dried out, and I dont want the cheesey part to be too thick. Day 313. Nancy emailed me this recipe at the beginning of this week, and since I had everything in the house, I plopped it in the crockpot yesterday. This is a fun roast! The coffee really tenderizes the meat, and it becomes fork-tender than other roast recipes. I tweaked her original recipe according to what we had in the pantry, and was pleased with the results. Adam and I ate ours with a spinach salad and the girls dipped their "steak" in barbecue sauce.
