A Gluten Free or other allergen free! Thanksgiving

A few weeks ago, my friend Diane at The W.H.O.L.E. (whole healthy organic living everyday) Gang had the brilliant idea to host a Gluten Free Progressive Dinner, with Thanksgiving as the theme. Im pleased to be a stop on the journey, with my Corn Bread Slow Cooker Stuffing. Its absolutely delicious, and I look forward to bringing it along to my moms house on the 26 th for our family Thanksgiving dinner. I dont write too much about gluten free stuff, because I try really hard not to let this allergy change the way we eat. I feel as if we eat a balanced diet full of lots of food and grains, we just happen to steer clear from wheat, barley, rye, and oats (unless they are certified gluten free), and read labels meticulously. Easy Calabacitas or Cheesy Summer Squash with Onions and Chiles Low Carb Gluten Free

If you have a surplus of zucchini, use some of them to make this delicious and easy Calabacitas. (Updated with better photos and step-by-step instructions, August 2014.)   Calabacitas is a traditional recipe from the American southwest, and it's a quick and easy way to use up abundant summer squash if you have them in your garden.  Traditional recipes for Calabacitas sometimes include things like corn or tomatoes, but in my version I concentrate on the flavors of the squash, onions, cheese, and green chiles.  This is definitely a recipe that should be made to individual taste, and when I first made this I thought a 4 oz. can of diced green chiles was plenty spicy, but now I'd probably use a bigger can.  Key to the flavor here is slightly browning the onions and squash as they cook; as long as you manage that you can't go wrong with this easy recipe. I was recently asked at a presentation what my thoughts were on juicing. Moreover, new years is quickly approaching and with it come resolutions, which many will be losing weight, especially after indulging during the holidays. Therefore, I decided to write about whether to juice or not to juice. People juice for several reasons; whether its "detox", weight loss, staying healthy or "rebooting", but is it appropriate?! Many companies talk about raving health benefits, however, hardly any of these claims can be supported by scientific evidence.    The best way to do help you decide if to juice or not is by just dividing it to pros and cons: Pros Good way to get more fruits and vegetables in the diet, especially if you are picky or not a big vegetable and fruit eater High in antioxidants as well as vitamins and minerals Feels "lighter" since you do not chew anything or have "bulky" food in your stomach Could help with weight loss   Cons Very pricey....

Before I put my full attention to celebrating the holidays with the family, I will leave you with some ideas for a vegan holiday menu. All recipes, except for the celebration roast, are gluten free. For the appetizer, try the roasted garlic and kalamata olive hummus . Hummus is perhaps the easiest appetizer to make from scratch. The basic ingredients include garbanzo beans, tahini, garlic, lemon juice and salt. But you can add many different ingredients to change it around. Besides roasted garlic and kalamata olives, try adding roasted red peppers, artichoke hearts, avocado or spice it up with a jalapeño or cayenne.
