Slow Cooker Green Chile Shredded Beef Cabbage Bowl with Avocado Salsa Low Carb Gluten Free

Image
I love all the flavors in this Slow Cooker Green Chile Shredded Beef Cabbage Bowl with Avocado Salsa. When I look back in the monthly archives on Kalyn's Kitchen, it's interesting to see that the things I'm cooking at certain times of the year have a definite pattern.  For example, I obviously like to hold on to summer as long as I can, so every September I have Zucchini Recipes and Tomato Salads posted long after many bloggers have moved on to soups and pumpkin.  I'm sure there will still be more zucchini and tomato recipes coming this year, but I hope I can get a little credit for this Slow Cooker Green Chile Shredded Beef Cabbage Bowl with Avocado Salsa as a wonderfully season-spanning dish as we move from summer to fall.  The recipe has a layer of crunchy spicy slaw and some avocado salsa for summer, topped by spicy green chile beef that cooks in the slow cooker for fall.  I really loved this dish which I thought was just spicy enough to be interesting.  The shredd...

Beefy and Cheesy Low Carb Green Chile Bake Gluten Free

Image
Beefy and Cheesy Low-Carb Green Chile Bake is a low-carb casserole recipe the whole family will enjoy! It's Monday morning of a brand new year, and I can tell from my blog stats that lots of you are starting the year with a commitment to more carb-conscious eating!  Every year I focus on Phase One (low-carb) recipes during January, and I'm starting 2015 with this new recipe for Beefy and Cheesy Low-Carb Green Chile Bake .  This recipe was inspired by the Chile Rellenos Bake I like so much, and  it's a low carb meal your whole family will enjoy.  It seems like every January I want to lose a few pounds, although this year I was happy to discover that on New Year's Day I actually weighed almost 7 pounds less than I did on that date last year.  But that doesn't mean there's not room for improvement!  If you're looking for low-carb recipe ideas for January, signing up for blog updates by e-mail is the most reliable way to make sure you see all the recipes.  You c...

Recipe for Chicken Egg Foo Yung with Mushrooms and Green Onions

Image
If you like Egg Foo Yung in restaurants, this is a delicious version to make at home. (For Phase One Fridays I highlight Phase One recipes from the past that have been my personal favorites.  If you've never thought of making Egg Foo Yung at home, I think you'll be pleasantly surprised by this recipe.) In 2001 I went to Hong Kong and Beijing with my brother Rand, and it didn't take long to realize that most of what we consider to be "Chinese food" in the U.S. is definitely Chinese-American food. I know Egg Foo Yung is one of those dishes that falls in the Chinese-American category, and although it doesn't get much respect compared to more exotic items you find on menus, it can be one of my favorites when it's made well. I learned to love Egg Foo Yung at The Pagoda, a Chinese American Restaurant in Salt Lake (with a Japanese name!) My family went there for special occasions, and I remember eating Egg Foo Yung at the Pagoda as a reward for making the h...

Thanksgiving Green Bean Salad Recipe with Blue Cheese Dried Cranberries and Pecans

Image
Thanksgiving Green Bean Salad has Blue Cheese, Cranberries, and Pecans, and it can be made ahead! There's a lot to love about this Thanksgiving Green Bean Salad .  Not only is it Thanksgiving-dinner-worthy in the flavor department, but you can cook the beans and marinate them in the dressing, and toast the pecans, crumble the blue cheese and measure the cranberries all in advance, so when it's turkey dinner time all you need to do is toss the salad together.  The salad is great at room temperature too, so you don't even need much fridge space.  I'm calling it Thanksgiving Green Bean Salad because there are a few ingredients here (like dried cranberries and blue cheese) that are a bit of a splurge if you're trying to lose weight, but I'd definitely indulge in this salad on Thanksgiving.   Click to continue reading

Worlds Easiest Garlicky Green Beans Stir Fry Recipe Low Carb Gluten Free

Image
There's nothing like fresh green beans and the World's Easiest Garlicky Green Beans Stir Fry is a great way to cook them! (For Phase One Fridays I feature Phase One Recipes from the past that have been my personal favorites. Phase One Recipes are also Low-Carb and Gluten-Free, but for this recipe be sure to use Gluten-Free Oyster Sauce if needed, as most oyster sauce has a tiny amount of wheat flour.  I first made this back in 2009 when I had green beans in my garden, but now I'd buy beans at the farmer's market to make this favorite recipe.) Beans used to be one of those plants that didn't get too much respect from me in the garden. I found them hard to keep picked, and truthfully, sometimes I ended up with overgrown beans I had to throw away.  But all my thoughts about beans changed after I made some fresh green beans into this World's Easiest Garlicky Green Beans Stir Fry .  Seriously, I could eat beans every day if they were cooked like this. Green Eggs and Ham Scrambled Eggs with Ham and Kale

Image
If you have kids or grandkids who like Dr. Seuss, you might be able to get them to eat kale in this fun version of Green Eggs and Ham. I was one of those kids who grew up with my nose in a book, and my love of reading has continued to this day.  In fact, now that I am officially "retired" and working at home I schedule some time nearly every day to read for a few hours, and look forward to it as a highlight of the day!  But when I was teaching elementary school I realized all too well that some kids don't love to read, and I remember being excited in 1997 when the National Education Association came up with the idea of a national celebration on Dr. Seuss' birthday, designed to get kids to be more enthusiastic about reading. You may not have known that Read Across America was started as an NEA project, but I bet you've seen news coverage of events to promote reading happening in schools, stores, and libraries on Dr. Seuss' birthday, and if you have kids or gran...

Recipe Green Smoothie with Kale Banana and Milk

Image
As I was making my breakfast this morning, it hit me that this would make a wonderful breakfast for an athlete on-the-go because it is so quick to prepare. It is a light breakfast, but still packs in a good amount of carbohydrate with some added protein. Adding in the kale really gives this smoothie an extra punch of nutrition. Who says you cant have your dark leafy greens in the morning? This smoothie is also an excellent source of calcium because both the kale and milk are rich sources.  In my breakfast smoothie that I have pictured, I used: 1 cup of chopped kale 1 cup of vanilla soy milk 1 banana 1 tsp chia seeds (optional) I blended those ingredients until smooth, then I added in a few ice cubes and blended again. Nutrition facts: 258 calories, 49 grams carbohydrate, 11 grams protein, 5 grams of fat

Weight Loss Supplements Exposed Green Tea Probiotics Fat Loss Energy Expenditure Fat Oxidation Sex More

Yesterday at Starbucks: "I just ordered a bottle of probiotics!" In view of the fact that all the feedback I got in response to the re-installment of the Short News was positive, I guess you wont mind if I use the chance and bundle the two soon-to-be-published weight loss studies from the British Journal of Nutrition into a Weight Loss Supplement Mini-Special of the SuppVersity Short News . If you were actually sitting next to you, I would probably ask you, whether youd prefer the good, or the bad news, first!? Well, I guess Ill start with the bad one, then: Green tea sucked - again! ZERO effect of EGCG supplementation in overweight women To examine the effects of green tea epigallocatechin-3-gallate (EGCG) on the changes in body composition (! not just weight), energy and substrate metabolism, cardiometabolic risk factors and liver function enzymes after an energy-restricted diet intervention in obese women, a group of researchers from the University of the Basque Countr...

Raw Apple Pear and Fig Green Smoothie A High Fiber Breakfast or Snack

Image
Fiber - Why its Important I recently had a discussion with a woman who was complaining of severe and chronic constipation. She asked me what to do. When discussing her diet, she admitted that bread, pasta and desserts, all made with processed white flour, are her weakness. Now I know that this isn’t an appetizing topic, especially when you probably came here around mealtime looking for a delicious recipe, but the fact is most Americans eat far less than the recommended 25 to 35 grams of fiber per day. Fiber is extremely important in preventing constipation. It’s no wonder that this is an extremely common condition. Eating a diet rich in fruits, vegetables, legumes, whole grains, nuts and seeds can give you the fiber you need. Eating a diet high in meat and processed grains will leave you falling way short. Meat has zero fiber since fiber only comes from plants. A slice of white bread only has 1 gram because processing the grain removes the fiber-rich bran. A raw pear, on the other ha...
