We are officially Back to School---it started Monday. Ive mentioned before that I am a meal planner, and the fall brings out a plethora of good intentions to eat wholesome family meals together each night, and share highlights of the day. This year was no different. I had my menu planned out, and a shopping list ready to go. But. This year Im pregnant (baby girl #3!), and I have a new kindergartner . Which means that instead of going to the store while both girls were in school, I disinfected the blinds (thats totally normal... right?) and instead of going right after kindergarten let out, we both fell asleep on the couch during Arthur. If you like Egg Foo Yung in restaurants, this is a delicious version to make at home. (For Phase One Fridays I highlight Phase One recipes from the past that have been my personal favorites.  If you've never thought of making Egg Foo Yung at home, I think you'll be pleasantly surprised by this recipe.) In 2001 I went to Hong Kong and Beijing with my brother Rand, and it didn't take long to realize that most of what we consider to be "Chinese food" in the U.S. is definitely Chinese-American food. I know Egg Foo Yung is one of those dishes that falls in the Chinese-American category, and although it doesn't get much respect compared to more exotic items you find on menus, it can be one of my favorites when it's made well. CrockPot Recipe for Salsa Pork Chops with Cumin Garlic and Lime

These tasty Salsa Pork Chops simmer in the CrockPot while you're busy doing other things! When I first tried this recipe for Slow Cooker Salsa Pork Chops, I made the recipe twice to try to get a better photo, and in both cases I wasn't completely satisfied with the photos.  However, I was completely happy with these tender Southwestern-flavored pork chops in a sauce that was just slightly spicy.  Even though the sauce kind of ran out over the plate on this latest photo of this dish, I'm happier with it, and I promise this is an easy slow cooker meal that will make you happy as well. This healthy Greek Yogurt and Tahini Dip will be welcome on a buffet table loaded with rich holiday foods! Everyone who's trying to make it through December without gaining ten pounds, raise your hand.  (Kalyn has both hands raised.)  Every year I think about the dilemma of joining in holiday celebrations without overdoing it on sweets and other rich holiday foods.  There's no easy answer,  but having something healthy to nibble on among the more indulgent choices can really help, and that's where this Greek Yogurt and Tahini Dip for Tomatoes and Cucumbers comes in. (Updated March 2014 with more options and better photos.)  Even if you don't have even the tiniest bit of Irish blood, you're still probably aware that next week is St. Patrick's Day.  I don't remember my mom ever cooking special food for this day, and since I've been a food blogger I've learned that many foods Americans cook for this holiday are not really Irish at all.  I am a little bit Irish, but even so I'm not claiming that my favorites in this post are authentic Irish recipes.  Still they're a fun way to celebrate the day, and most of these are lightened up a bit from the Irish-Americans foods that are often eaten on this day.  Enjoy!
