Pan-seared and Roasted Mahi Mahi with Mediterranean Salsa and Feta is an easy week-night dinner. Roasted Brussels Sprouts are a wonderful side dish, so don't save them just for Thanksgiving. Weight Loss Recipes Chicken Roasted Vegetable Wrap

This is a great lunchtime dish as you can prepare it the night before – all you need to do at lunch is assemble your wrap! Ingredients: 1 chicken breast 1 red pepper 1 courgette 1 red onion 2 tortilla wraps 4 button mushrooms Good pinch paprika and half tsp. chilli powder Oil spray Method of Preparation: Chop the red onion into chunks and half the mushrooms. Slice the red pepper in half, remove the seeds and pith then slice into strips. Slice the courgette and then slice the chicken breast into strips. Place chicken, red pepper, courgette, red onion and mushrooms on a baking tray and spritz with oil spray. Sprinkle with chilli and paprika then put into an 180C oven for around 25 minutes, until the chicken and veg are cooked. Remove to the oven and allow to cool. Serve up on soft floury tortillas the following day. Add some freshly washed salad leaves for even more crunch and flavour. Recipe serves 2. A Sushi Dish that Appeals to All This delicious, warm sushi roll has broad appeal. Besides the traditional raw fish lovers, this is a good sushi option for vegans and vegetarians. It is also a sushi alternative for pregnant women who are avoiding raw fish. Brown Rice Sushi The first time I had brown rice sushi was at a restaurant in Palo Alto that was actually named "Brown Rice Sushi". I was quite excited to think that I could eat one of my favorite foods and not have to eat white rice. Its not that I dont enjoy white rice, in fact I do. But from a nutritional point of view, I always opt for whole grain. Even though white rice is often fortified with many of the vitamins that were stripped out during the manufacturing process, cooked brown rice has much more fiber, about 4 grams per cup.
