  If you didnt get enough of a Mexican food fix yesterday for Cinco de Mayo, heres an easy recipe that will make everyone in the house happy. and since todays Friday, its probably more appropriate to have your celebratory margarita today, anyway.  Right? or another. its okay. I dont judge. The Ingredients. serves 8 1 small onion, peeled and diced 1 green bell pepper, seeded and chopped 2 (14.5-ounce) cans diced tomatoes, undrained 1 (4-ounce) can roasted green chiles, undrained 1 teaspoon garlic powder 1/2 teaspoon chili powder 1/4 teaspoon ground cumin 8 flour or brown rice tortillas (brown rice tortillas are GF; read packing carefully) 4 cups cooked pinto beans (three 15-ounce cans, drained) 4 cups shredded Mexican blend cheese optional garnishes: sour cream, sliced avocado, etc. If youre going to use dry beans instead of canned, this is how you do it. CrockPot Hash Brown Breakfast Casserole

Day 228. In the past few weeks Ive gotten a few different emails from fantastic people sharing their hash brown layered casserole breakfast concoctions. This is a combo of Melba, Mikell , and Alisons recipes. We were ecstatic with the results. This is a keeper, and something you should definitely file away for a brunch or potluck get-together. The Ingredients. 30 ounce package of plain frozen hash brown (shredded) potatoes 4 already-been cooked sausage, or leftover diced ham (I used chicken and apple sausage) 1/2 yellow onion, diced 1 green bell pepper, seeded and diced 1 1/2 cups shredded cheese 12 eggs 1 cup skim or fat free milk 1 teaspoon kosher salt 1 teaspoon black pepper The Directions. I used a 6 quart Smart-Pot for this recipe. Spray the inside of your crockpot with cooking spray. Dump in the whole package of hash browns . Tuna and Noodle Casserole in the CrockPot

Day 164. Hello! Its day 5 of Retro Week. So far weve had instant mashed potatoes , green bean casserole , sloppy joes , and cabbage rolls . Today Ill show you how I made tuna and noodles in the crockpot. I grew up on tuna and noodles, and loved them. I remember eating them cold out of the pot for breakfast because I loved them so much. We either used cream of mushroom soup or golden mushroom soup, and mixed it with a can of drained tuna and cooked noodles. It was wonderful. I was certain that the tuna and noodles would work well in the crockpot. I have done pasta before, with the ziti , spinach and cheese noodles , and the lasagna . But this didnt work. Well, it cooked, and it was edible, but no one liked it, and it most certainly didnt taste like my childhood tuna and noodles. This is what I did. If anyone can "fix" it---please let me know!
