Use leftover grilled or rotisserie chicken to make this Leftover Chicken Salad with Mustard, Hearts of Palm, and Olives. (For Phase One Fridays I feature Phase One Recipes from the past that have been my personal favorites.  I've been seeing small perfect zucchini at the farmer's market for the last two weeks now, so it seems like a perfect time to make this Raw Zucchini Salad with Lemon, Herbs, and Goat Cheese .) Zucchini Carpaccio is a dish I've been intrigued by since I first heard about the idea of thinly slicing zucchini and then marinating it in a dressing of olive oil and lemon juice, so I have no idea why it's taken me so long to try it. It was the Carpaccio of Raw Zucchini from Sidewalk Shoes that finally pushed this dish to the top of my list. Vietnamese Cabbage Salad with Chicken and Cilantro

This Vietnamese Cabbage Salad is perfect to make with leftover chicken, and I love that the dressing has no oil! (Updated with better photos and step-by-step instructions, June 2013.)    Way back in 2007, Glenna from A Fridge Full of Food posted a recipe for Vietnamese Cole Slaw, and the minute I saw the recipe, I knew I'd be making some version of it.  Glenna had a Vietnamese co-worker who told her that in Vietnam the dressing for this type of salad would never contain oil, and I love the light but highly flavored dressing here that includes fish sauce, rice vinegar, and lime juice.  And since I have a hard time walking by those rotisserie chickens at Costco without having one jump into my cart, I'm always looking for salads ideas to use the leftover chicken.  With the light dressing, chicken, radishes, and crunchy cabbage, I think this Vietnamese Cabbage Salad with Chicken and Cilantro is perfect for summer. Chopped Chicken Salad with Cafe Rio Flavors Low Carb Gluten Free Phase One

A delicious Chopped Chicken Salad with all the flavors that make Cafe Rio Salad so good! Thanksgiving Green Bean Salad has Blue Cheese, Cranberries, and Pecans, and it can be made ahead! A Great Source of Fiber and Vegetarian Protein Couscous is a tiny pasta thats common in Algerian and Moroccan cuisine. It reminds me of pastina, the Italian equivalent that I grew up with. I love the "lightness" of couscous and have been on the outlook for a "whole grain" version of this pasta for years. I was thrilled to find whole grain couscous at Trader Joes this weekend. I quickly scooped it up and couldnt wait to try it. Whole grain pasta always contains more fiber and other nutrients than its highly processed counterpart. To get at least 25 grams of fiber per day needed for optimum health, you really shouldnt waste many meals with processed and refined foods. This whole grain couscous recipe packs over 11 grams of fiber per serving (almost half of your daily requirement) with most of it coming from the whole grain couscous and garbanzo beans.
