March To The Beet

Image
Well, my last post was about listening to our bodies and mines been screaming, "Beets, please!" I dont know what possessed me to even buy one recently, but now Im obsessed with these sweet amethyst gems. I do believe in the bodys innate intelligence and capacity to heal itself, and Im just trusting that, for whatever reason, this is what my body needs at the moment. Said to be both blood cleansing and blood building, beets are loaded with nutrients: beta-carotene, B-complex vitamins, vitamin C, calcium, magnesium, copper, phosphorus, sodium and iron. Betaine – an amino acid that gives the beet its gorgeous color – helps increase oxygen intake and lower homocysteine levels, which is especially beneficial in combating premature coronary artery disease and stroke. Beets have long been known for their amazing health benefits in treating anemia. Theyre also very helpful for constipation, irregular menses, acne and gout. Did you know that beets can normalize blood pressure, lowe...

Christmas Ham in the Slow Cooker Honey Citrus

Image
photo by Tara Donne Weve got 10 days until Christmas! Its time to start panicking! I must be in complete denial because so far Ive got this weird peaceful vibe going on. I sort of feel like things will just get done when they get done. Or they wont. But Im oddly calm about the whole thing. of course it might also be a side effect from all the spiked eggnog.......... Anyhow, if you are in charge of Christmas or Christmas Eve dinner and youre in the mood for ham, you should make this one. Its tasty and it involves citrus pulp, honey, cloves, and ginger ale.  The Ingredients serves 8 1 (6-to-7-pound bone-in spiral cut smoked ham 1/4 cup honey 1/4 cup spicy brown mustard 1/4 teaspoon ground ginger 1/4 teaspoon ground cloves 1/4 teaspoon ground cinnamon 1 orange, juiced 1 lemon, juiced 1 lime, juiced 1 cup ginger ale The Directions Use a 6-quart slow cooker. The Smells Of The Season

One of the things I love most about this time of year are the smells. I can still remember the aroma that filled the house after Mom had spent the day baking holiday goodies. Warm and wonderful is how it made me feel, whether I was an eight-year-old coming in from sledding, or an eighteen-year-old coming home for winter break. Ive discovered you can re-create the same delicious scents by putting a raw spin on some traditional holiday favorites. Going to a holiday party this weekend, or hosting one of your own? THE ATKINS DIET ALSO VICTIMS!

Image
In its editorial, the Lancet, one of the largest international medical journals, reports the case of a woman hospitalized in urgency following an Atkins diet. This is an opportunity to remember that too unbalanced diets are potentially dangerous, such as the Atkins diet that eliminates the sugars diet. Atkins diet Vomiting, nausea, loss of appetite, stomach pain, nothing was more to this woman than 40 years, obese, which followed last month Atkins diet in which she ate only meat, salads and cheese. She took in addition to vitamins, trace elements and omega 3 fatty acids, which did not change anything: When a plan is too unbalanced, dietary supplements can not replace it. A diet that ends at the edge of coma The balance sheet shows performed emergency ketonuria urine (excessive elimination of ketone bodies, acidic compounds) and acidity of the blood, which confirms that this woman was going into a coma, such as those observed in people making big fasts or among private diabetic insulin....

A Feast For The Eyes A Glass of Emerald

Sometimes, looking is enough.   And, sometimes, you just have to give in to temptation. Friday Food Porn One of my latest haunts on the web is a relatively new site called Golubka. Its a mother-daughter collaboration covering good food, clever design, and some things in between. The "in between" would be photographs – lots of them – that make me want to jump up off my chair and dive right into the computer screen. Case in point: this gorgeous glass of greeeeeeeen smoothie. Twenty-month-old Paloma drinks them twice a day. { Id like to gnaw on Palomas sweet cheeks twice a day. Such a cutie! } Paloma likes lots of her mamas sexy raw vegan recipes. I betcha you will too once you get a taste. Live a little. Its the weekend.

Dijon Corned Beef in the Slow Cooker

Image
Hey Steph, did you really cook that corned beef in the slow cooker? How come its not wet and slimy? Isnt corned beef supposed to be wet and slimy? Until a few years ago, I shied away from St. Patricks Day. I hated getting a plate full of wet meat topped with  lifeless cabbage. (is that too harsh? Im sorry if Ive offended the soggy cabbage and wet meat lovers of the world...including my husband...) Corned beef is quite a delicious piece of meat. Its brined, and packed with flavor all on its own. In this recipe, the meat cooks in its own juice--no additional liquid is required--creating a beautifully roasted (not slimy!) meat with a sweet, mustard glaze. The Ingredients. serves 6 3 pounds corned beef, trimmed of fat 1 tablespoon honey 2 tablespoons brown sugar 1 tablespoon prepared Dijon mustard 10 whole cloves (or you can use 1/2 teaspoon ground cloves) The Directions Use a 6-quart slow cooker. Unwrap the corned beef, and remove the seasoning packet (use it in another recipe, such a...

Slow Cooking in the Summer Months

Image
The weather has warmed, and were spending more and more time out in the yard.  I love it. But I STILL use my slow cookers more often than not for our family dinners, and I urge you to, too. Slow cookers take up very little electricity to run when compared to your stove or oven, and they do not heat your kitchen up the way those other appliances do. Youre not going to notice that your AC is struggling to keep the kitchen cool, and youre not going to be standing over a hot stove, trying not to drip into your pasta sauce. (ew. thats really gross, steph.) Ive listed my favorite ways to use the cooker below --- if youve got a family favorite, add it to the list! FISH Love, love, love fish packets in the slow cooker. The fish steams perfectly in a foil or parchment-paper packet and you get a beautiful, flaky finished result without stinking (or heating!) up your kitchen. FISH Lemon and Rosemary Chicken We make this chicken pretty often, and I like to use the leftovers on top of salads or...

SLEEP WELL THE KEY TO NOT BE FAT

Image
Sleep is essential for the functioning of our brain, but also our whole body. Data accumulate on the link between lack of sleep and obesity, but also diabetes and cardiovascular disease. Good sleep seems more essential than ever! Obesity? And if it was related to poor sleep, insufficient sleep? The effects of sleep deprivation are well known: daytime sleepiness, decreased academic or work performance, impaired quality of life, depression, increased risk of accidents, etc. But today, new evidence is accumulating showing that sleep debt may also have a negative impact on metabolism and cardiovascular function. After analysis of all published studies on this subject, a dozen of them stand out and bring very convincing data. The main findings for the link between sleep and chronic disease. Sleep time and Obesity The reduction of sleep time is proportionally associated with obesity in adults. In children, this relationship is observed even for very small reductions in sleep time. Hence the ...

Asian Inspired Turkey Breast in the Slow Cooker Recipe

Image
Hello! How has summer been treating you so far? Weve been laying kind of low, with weekend trips scattered here and there, but mostly were just enjoying being at home.  While I type, the big kids are watching an "Americas Got Talent" marathon from the DVR and the baby (now eighteen months! eeps!) is cooking Lincoln Log soup in the play kitchen. and the heater is running. because its 66 degrees in the house and drizzling outside and I AM A GREAT BIG HUGE HONKING WUSS. I promise Ill turn it off by 10am. I think. maybe. I get emails about slow cooking during the summer time, and my answer is that yes, I do use my slowcooker(s) year round. It helps that it is F R E E Z I N G today, but even on hot days I prefer to use the crockpot than heat up the kitchen by using the stove or oven. I like that fish steams so nicely in foil packets without a fishy smell, and Im getting pretty good at making lettuce wraps.  This is a great summer time recipe---- the turkey is seasoned with s...

Let The Sunshine In

Image
Ive had low-grade, chronic depression for what feels like forever, probably since I entered puberty, actually. Years of therapy resulted in lots of insight and self-reflection, but produced no significant change in how I felt day-to-day. Same thing with alternative means of healing  — reiki, acupuncture, neurolinguistic programming, craniosacral, polarity, homeopathy, naturopathy, etc. etc. You name it, Ive tried it, including seeing shamans on three different continents. And while I may have experienced temporary relief, alas, the underlying depression remained, like a dull ache. Ive been transitioning to raw (85 - 90%) for four weeks now, and the emotional/mental change is significant. I feel like I just crawled out from underneath a huge rock and am being exposed to the sun, light, and air for the first time in decades. The clarity is astounding. Everything looks brighter, crisper. [Perhaps my vision is improving?] I can breathe. Whatever it was that weighed so heavy on my mind ...

Apple Coffee Cake made in the Slow Cooker

Image
Its the Bunnykens dish set again! (side note: I really should take a run to the dollar store and get more unmatched dishes so I can post food pictures on the Internet.) I really like baking in the slow cooker. I get it that this perhaps sounds a bit odd---- why should I bake something in the crockpot for 2 to 3 hours, when I can easily throw a pan in the oven and have coffee cake in only 30 minutes? Ill tell you why. Im bonkers. I dont mean this in the clinical sense (although Im sure some could argue otherwise), I mean it in the Im always doing too many things at once and sitting around waiting for 30 minutes for a cake to rise and bake properly just isnt going to happen. because the doorbell rings. or the phone. because the baby needs changing.  or because she plays with a bottle of vanilla extract while "sorting" the spice cabinet and some spills and she licks it up and then her mom reads the bottle and finds out its 26% pure alcohol and maybe-just-maybe over-reacts and ...

Tuna and Noodle Casserole in the CrockPot

Image
Day 164. Hello! Its day 5 of Retro Week. So far weve had instant mashed potatoes , green bean casserole , sloppy joes , and cabbage rolls . Today Ill show you how I made tuna and noodles in the crockpot. I grew up on tuna and noodles, and loved them. I remember eating them cold out of the pot for breakfast because I loved them so much. We either used cream of mushroom soup or golden mushroom soup, and mixed it with a can of drained tuna and cooked noodles. It was wonderful. I was certain that the tuna and noodles would work well in the crockpot. I have done pasta before, with the ziti , spinach and cheese noodles , and the lasagna . But this didnt work. Well, it cooked, and it was edible, but no one liked it, and it most certainly didnt taste like my childhood tuna and noodles. This is what I did. If anyone can "fix" it---please let me know! The Ingredients: --1 lb dried pasta --6oz can of tuna (I mistakenly got it packed in oil. that set off a domino effect of bad tuna cass...

Fat burners do not fall into the trap

Image
When we want to lose weight after a period of "food galore," one is tempted to remove the pounds quickly. And yield to the temptation of proposals of products and foods called "fat-burning". Some are dangerous, some not. All under the illusion. How we burn its fat? This bold, often cursed when it is misplaced and too much is made of lipids nicely and well housed in cells called adipocytes. The lipids may provide energy by transforming into glucose which is almost the only fuel our cells. For this transformation to occur, there must be no more subject to glucose. Now, it has between 300 and 500 g in the form of glycogen stored in liver and muscles. Making between 1200 and 2000 calories (1 g glucose = 4 calories). Enough to keep a good time, almost a full day before fat does roll for providing energy. Unless you spend more calories. And the only way to do this is to have a physical activity that you actually evacuate more than you eat it. In other words, moving you an...
